Adapted from Freddie Sarkis’s 2016 original at Chicago’s Broken Shaker, Pineapple Express is a visually striking cocktail that’s as delicious as it is beautiful. Each ingredient is carefully floated for vibrant layers and a burst of tropical flavor.

How To Make a Pineapple Express

Ingredients:

  • Bottom layer: 2 oz pineapple juice

  • Middle layer: 1 oz Kōloa Kaua'i Coffee Rum

  • Top layer: 1 oz Kōloa Kaua‘i Spice Rum

  • Garnish: Fresh pineapple piece

Instructions:

  1. Start with a chilled glass and gently pour pineapple juice as the base layer.

  2. Carefully float the coffee rum over the back of a spoon to create a distinct middle layer.

  3. Top by floating the spice rum, again using the spoon technique, for a beautiful final layer.

  4. Garnish with a piece of fresh pineapple.
