Spicy Dark and Stormy Cocktail

A punchy, tropical twist on the classic mule—Kōloa Spiced Rum and Kōloa Dark Rum combine with tangy calamansi lime juice and bold ginger beer. Garnished with lime and star fruit, it’s a dazzling, island-inspired refresher!

Ingredients

  • 2 oz Kōloa Spiced Rum

  • 2 oz Kōloa Dark Rum

  • 1 oz calamansi lime juice

  • 6–8 oz strong ginger beer (preferably Bundaberg)

Garnish

  • Lime wedges

  • Star fruit slices

Instructions

  1. Fill two large rocks or collins glasses with ice.

  2. Add both rums and calamansi lime juice.

  3. Stir gently, then top with ginger beer.

  4. Garnish with lime wedges and star fruit slices.

  5. Serve immediately.

  • Use a robust ginger beer (not light ginger ale) for spicy flavor and true mule character.
