4 tbsp pomegranate arils (divided)

4 oz Kōloa Gold Rum

2 oz elderflower liqueur

2 oz passionfruit syrup

1 oz lime juice

2 oz pomegranate juice

2 tsp simple syrup (optional, for more sweetness)

Instructions

Muddle 2 tbsp pomegranate arils in the bottom of each of two collins glasses. Fill glasses with ice.

In a shaker with ice, add rum, elderflower liqueur, passionfruit syrup, lime juice, and pomegranate juice. Shake until well chilled.

Pour into prepared glasses. Top with sparkling rosé.

Garnish each with a few pomegranate arils and a fresh mint sprig. Serve immediately.
